Cauliflower With Cheese and Shallot Sauce |

Ingredients:
1/2 medium cauliflower |
90 g butter (3 oz.) or 90 g margarine (3 oz.) |
8 slices wholemeal bread, crumbled |
2 tablespoons flour |
1 cup milk |
seasoning |
90 g cheese, grated (3 oz.) |
4 shallots, chopped |
Directions:
1. Divide cauliflower into florets, cook in boiling salted water until tender, drain. 2. Melt half the butter in a saucepan and saute the breadcrumbs until browned. 3. Make a white sauce with the remaining butter, flour and milk. 4. Season and stir in the cheese and shallots. 5. Arrange cauliflower in an ovenproof dish, spoon over the sauce and sprinkle with the breadcrumbs. 6. Bake uncovered at 350 degrees for 20 minutes or until browned. |
