Cauliflower With Almonds And Brown Butter

CAULIFLOWER WITH ALMONDS AND BROWN BUTTER This recipe came from an estate sale. I obtained it when I purchased the family collection from the Garza Estate in Royse City, Texas in 1994.
Ingredients:
1-1/2 pounds cauliflower trimmed into olive size florets
6 tablespoons unsalted butter
1 teaspoon coarse sea salt
1/3 cup slivered almonds
Directions:
1. Steam cauliflower until tender but still slightly crisp about 7 minutes.
2. Remove from steamer and pour into large serving bowl.
3. In small pan melt butter with a large pinch of salt over medium low heat.
4. When foam has subsided and butter has simmered a minute or two add almonds.
5. Continue cooking until butter begins to smell nutty and toasty and almonds are golden brown.
6. Pour nuts and butter over cauliflower and toss to coat.
7. Season with salt and toss again then serve immediately.
