Cauliflower Rye Casserole |

From the good people at Mooserwood Restaurant. Ingredients:
1 cup beer |
3 cups rye bread cubes |
1 head cauliflower, cut into bite size pieces |
2 tablespoons butter |
1 teaspoon caraway seed |
3 cups grated extra-sharp cheddar cheese |
4 eggs |
1 teaspoon dry mustard |
1/2 teaspoon ground coriander |
fresh ground black pepper, to taste |
Directions:
1. Pour beer and let sit until completely flat. 2. Dry bread cubes on a baking sheet in a 300F oven until browned, making sure they do not burn! 3. Saute cauliflower in butter with the caraway seeds, until just tender. Combine with bread and cheese and spread in a greased 2-quart casserole dish. 4. Mix remaining ingredients with reserved beer in a blender and pour over casserole. 5. Bake at 350F for 30-45 minutes, until browned and puffy. |
