I love my hand blender. This is a very simple soup that is also extremely healthy. It's wonderful with crusty fresh bread and cheese. Ingredients:
1 head of cauliflower, chopped |
2 ribs celery, chopped |
2 cloves of garlic, minced |
1 carrot, peeled and chopped |
1 onion, chopped |
4 cups chicken stock |
salt and pepper to taste |
parmesan cheese, grated |
Directions:
1. Heat 1 tbsp of olive oil in a pot. 2. Sweat garlic, onion, carrot and celery for a few minutes. 3. Add cauliflower and stock. Bring to a boil. Reduce heat to medium and boil for 15 minutes. 4. When cauliflower is soft/cooked, puree soup with hand blender right in the pot until smooth or desired consistency. 5. Season with salt and pepper. 6. Ladle into bowl and top with cheese. |
