This is the best recipe I have tried for this dish, it won my heart over enough to serve it at Christmas dinner, and even won over the skeptic. Ingredients:
1 head cauliflower, florets cut into one inch pieces |
2 medium potatoes, peeled and cut into 1 inch pieces |
2 cups cream |
2 sprigs fresh thyme |
salt |
pepper |
Directions:
1. Place in a pot cauliflower, potato, cream, the springs of thyme and a little salt and pepper. 2. Bring to a boil, then reduce heat and simmer for around 30 minutes. 3. Remove thyme. 4. Puree with a hand held blender until smooth. 5. Add salt and pepper, if needed. 6. Serve warm. |
