Cauliflower Potato Lentil Smash

Ingredients:
1 large onion, chopped
2 cloves garlic, minced
1/4 cup water
2 tablespoons cumin
2 tablespoons chili powder
2 tablespoons curry powder
4 cups vegetable broth
1 cup lentils
1 (15 ounce) can stewed tomatoes
2 small red potatoes, chopped
1 small cauliflower
2 cups frozen peas
1/4 cup cilantro, chopped
Directions:
1. Place onion and garlic in a large pot with water to cook, stirring for a couple of minutes.
2. Add 1 tablespoon each of cumin, chili powder, and curry powder and stir to coat.
3. Add the vegetable stock and lentils.
4. Mix well, bring to a boil, reduce the heat, cover, and cook for 30 minutes.
5. Add the tomatoes, potatoes and cauliflower.
6. Add another Tablespoon each of cumin, chili powder, and curry, if desired (to taste).
7. Continue to cook for another 30 minutes.
8. Stir in the peas.
9. Cook for 5 minutes.
10. Remove from the heat and stir in the cilantro.
