I found this recipe while perusing some food blogs at work. I scribbled it down on a post-it and completely forgot the source. I finally got around to trying it last night. It's a great recipe if you want to get something healthy (and tasty!) on the table fast. Pop 'em in the oven, then pop 'em on the table, then pop 'em in your mouth! Ingredients:
1 head cauliflower, cored and cut in florets |
1 tablespoon olive oil |
1/2 teaspoon salt |
1/4-1/2 teaspoon chili powder |
1/4 teaspoon cumin |
1/4 teaspoon ground ginger |
Directions:
1. In a large bowl, combine oil and spices. 2. Add florets, and toss until evenly coated. 3. Roast at 400 for 25 minutes, stirring halfway through. |
