Cauliflower Pesto Soup

Yummy Vegan Soup
Ingredients:
1 medium onion, chopped
5 cloves garlic, minced
4 cups water
575 g medium head cauliflower, cut into florets
14 oz white navy beans, rinsed & drained
1 cup basil leaves
2 tablespoons tahini
1/2 tsp salt
1/2 tsp pepper
1 tbsp garlic powder
Directions:
1. Sautï¿1/2 the onion in a non-stick pan until translucent, about 3 minutes.
2. Add the garlic and sautï¿1/2 for one minute more.
3. Add the hot water and cauliflower, reduce heat, and cover. Cook until the cauliflower is completely tender, about 10-15 minutes.
4. Add the beans and cook for another 5 minutes.
5. Add the basil and tahini.
6. Use a hand blender to puree the soup until it is completely smooth. (Alternately, put the soup in batches into a regular blender and blend smooth; return soup to the pot.)
