Do you have a head of cauliflower just sitting in the refrigerator? Do you love goat cheese? This is the most amazing blend of flavors. It has such a dignified blend of ingredients. Really - it is fabulous! Ingredients:
one head cauliflower (cut into florets) |
1/2 pint heavy cream |
salt |
pepper |
1/2 tablespoon fresh dill (optional) |
1 cup sharp cheddar cheese, grated |
1 cup monterey jack cheese, grated |
4 -5 ounces goat cheese |
1/4 cup parmesan cheese, grated |
fresh mozzarella cheese (optional) |
flat leaf parsley (chopped) |
Directions:
1. Steam or boil cauliflower florets until tender. 2. Mix cauliflower, heavy cream, salt, pepper and dill in mixing bowl. 3. Pour into a greased 9 x 9 baking dish. 4. On top of the cauliflower, layer the cheddar and monterey jack cheeses. 5. Dot with pieces of goat cheese. 6. Dust with Parmesan. 7. Add fresh mozzarella. 8. Bake covered at 350 degrees for one hour. 9. Uncover and bake until cheese is brown and bubbly. 10. Remove from oven and sprinkle with parsley. |
