This recipe is from The Vegetarian Low-Carb Diet by Rose Elliott. This is good for Phases 1, 2 and 3. This cauliflower mash is a revelation. Ingredients:
1 large cauliflower, broken into florets |
1 ounce butter or 2 tablespoons olive oil |
2 -3 tablespoons soymilk |
1 pinch salt and pepper |
1 pinch grated nutmeg (optional) |
Directions:
1. Bring 2 inches water to a boil in a large saucepan. Put in the cauliflower florets, bring back to a boil, cover and cook for 5-7 minutes, until the cauliflower is tender. Drain well. 2. Put the cauliflower into a food processor with the butter or olive oil, soy milk and salt and pepper and grated nutmeg if using. Whiz until you get a smooth, thick consistency. 3. Return to the saucepan and gently reheat, stirring so that it doesn't catch, then serve. |
