1. head of cauliflower florets 2. T. olive oil 3. /2 t. salt and pepper 4. T. unsalted butter 5. T. flour 6. /2 c. fat free milk 7. /2 c. heavy cream 8. /4 t. salt 9. c. grated sharp cheddar 10. Preheat oven to 400. Toss cauliflower in oil on baking sheet and sprinkle with salt and pepper. Roast until fork-tender and lightly browned (about 25 min.). Remove from oven and lower temp to 350. 11. Melt butter in md. pan over md. heat. Stir in flour and cook for 1 min. Gradually whisk in milk. Simmer over med.-high heat, stirring frequently until thickened, 2-4 min. Whisk in cream and cook for 5 minutes. 12. Remove from heat and stir in 1/4 t. salt and 1/4 t. pepper and all but 2 T. of cheese. Stir over md.-low heat for 5 min. 13. Place cauliflower in an 8x8 in glass baking dish. Pour cheese sauce over and sprinkle with 2 T. cheese. Bake until sauce is bubbly, 20-25 min. |
