Ingredients:
8 cup(s) culiflower florets (1 head) |
2 tablespoon(s) extra virgin olive oil |
1/2 teaspoon(s) kosher salt |
1/2 teaspoon(s) black pepper |
2 tablespoon(s) unsalted butter |
2 tablespoon(s) flour |
1 1/2 cup(s) fat free milk |
1/2 cup(s) heavy cream |
1/4 teaspoon(s) salt |
1 cup(s) sharp cheddar cheese graded |
Directions:
1. Preheat oven to 400. Toss florets in oil on a baking sheet. Sprinkle with kosher salt and 1/4t pepper. Roast until fork tender and lighlty browned, 25 minutes. Remove from oven. Reduce heat to 350 2. Melt butter in medium skillet over medium heat. Stir in flour and cook 1 minute. Gradually whisk in milk. Simmer over medium heat, stirring frequently, until thickened, 2-4 minutes. Whisk in cream and cook for 5 minutes. 3. Remove pan from heat and stir in 1/4t salt, 1/4t pepper and all but 2T of cheese. Stir ovre medium low heat for 5minutes. 4. Place cauliflower in an 8 x 8 glass baking dish. Pour cheese sauce on top. Sprinkle with 2T cheese. Bake until sauce is bubbly, 20-25 minutes. |
