My mother-in-laws recipe-a great low fat, low carb solution to those days where you just need a little something. Ingredients:
1 head cauliflower |
1 cup breadcrumbs |
6 tablespoons butter, melted |
1 (14 ounce) can 99% fat free chicken broth |
1 teaspoon garlic powder |
1/2 cup parmesan cheese |
Directions:
1. Boil cauliflower. Mash and sprinkle with parmesan cheese and garlic powder. 2. Add chicken broth and bread crumbs which have been mixed with melted butter. Bake 20 minutes. |
