Cauliflower Gratin With Goat Cheese |

I adapted this recipe from one by Bobby Flay. The cauliflower still retains a wonderful texture with a bit of crisp in this creamy dish. Ingredients:
1 head cauliflower, cut into florets |
2 cups half & half |
4 oz. garlic & herb goat cheese, cut into small pieces |
1/2 pound monterey jack cheese, shredded |
1 cup parmesan & romano blend, grated |
black pepper, feshly ground |
Directions:
1. Preheat oven to 400F. 2. In a medium casserole dish (I used 8x8 glass), arrange half of cauliflower then distribute half of goat cheese pieces and top with half of Jack cheese. Pour one cup half & half over & sprinkle pepper. Layer rest of cauliflower, goat cheese, Jack cheese, half & half and black pepper. Finally top with Parmesan/Romano. Bake for 30 minutes or until cauliflower is softened and sauce has thickened a bit. Remove from oven & let rest for 10 minutes before serving. |
