Cauliflower Cheese Soup

Ingredients:
1 cup butter
1/2 cup fresh cauliflower, chopped
1/2 cup celery, chopped
1/2 cup green pepper, chopped
1/2 cup onion, chopped
1/2 cup carrots, sliced
2 cups water
1 tbsp chicken base
2/3 cup flour
4 cups cream
1/2# sharp cheddar cheese, shredded
Directions:
1. Sweat cauliflower, celery, green pepper, onion, and carrots in 1/2 cup of butter for about 3 minutes.
2. Add water and chicken base, cook until veggies are tender like you like.
3. Add cream, mix until well blended.
4. Take remaining butter - melt in another small pot and stir in flour until thick.
5. Add butter/flour mixture to veggie mixture - stir well.
6. Stir in cheese.
7. Cook until nice and bubbly.
