Cauliflower Cheese
Ingredients:
6 spring onions
2 garlic cloves
800 g cauliflower, cooked
500 g yoghurt
1 teaspoon mustard
175 g cheddar cheese
2 eggs
salt
pepper
Directions:
1. Place a large, non-stick frying pan over a high heat. Add the spring onions, garlic, and cauliflower, and 100ml/3 1/2fl oz of water to the pan and cook for 5-7 minutes, until the water has been absorbed. Mix well, then transfer to a shallow, ovenproof dish.
2. Preheat the oven to 220C/Gas 7. Put all the topping ingredients in a bowl, season well and mix together. Pour over the cauliflower mixture, then place in the oven and bake for 15-20 minutes, or until lightly golden and bubbling. Remove and allow to stand for 5 minutes before serving.
