Cauliflower Casserole

Ingredients:
1 head cauliflower
1/2 cup onion, chopped
1/4 cup grated sharp cheddar cheese
1 (10 3/4 ounce) can cream of mushroom soup (low-fat)
1/2 cup milk
6 saltine crackers
2 tablespoons butter, melted
Directions:
1. Steam or boil cauliflower and 1/4 cup onions until tender.
2. Drain and place in a 13x9-inch casserole dish.
3. Mix grated cheese with remaining onion.
4. Add soup mixed with milk.
5. Pour this mixture over cauliflower.
6. Roll crackers and mix with melted butter.
7. Sprinkle on top of a casserole.
8. Bake at 350°F for 25 to 30 minutes.
