Having vege relatives visit, I used leftovers for this salad which I think will become a staple with the relatives Ingredients:
1 large head of cauliflower, steamed.cooked tender, separated into florets , cooled and coarse chopped |
1 cup barley already cooked- i used quick cooking |
2 large roma tomatoes seeded and chopped |
2 tbs chopped red onion- or chives |
4 hard cooked eggs, chopped |
salt, pepper to taste |
1 to 1 1/2 cups mayonaisse to make creamy |
1 tsp sugar ( or splenda ) |
Directions:
1. Mix the barley, cauliflower, onions and tomatoes 2. Bind with enough mayo 3. season to taste with salt, pepper, sugar 4. Stir in the hard cooked chopped eggs lasts 5. Serve warm or chilled |
