3 zucchini, grated |
1 green apple, grated |
1/2 head cauliflower, grated |
2 green onions, chopped |
1/2 cup toasted slivered almonds |
1/4 cup chopped fresh cilantro |
1/4 cup lime juice |
1/4 cup olive oil |
1/2 teaspoon salt |
1/4 teaspoon pepper |
1 tablespoon poppy seed (to garnish) |
Directions:
1. In a large bowl combine all of the salad ingredients. 2. In a small bowl whisk together all of the dressing ingredients. Taste and adjust seasonings. 3. Pour dressing over salad. Add poppy seeds and toss to combine. |
