CAULIFLOWER AND SPINACH SALAD This recipe came from an Estate sale. I obtained it when I purchased the family collection from the Blake Estate in Dallas, Texas in 1988. Ingredients:
3 cups cauliflower |
1/2 pound spinach |
dressing |
6 tablespoons vegetable oil |
3 tablespoons white wine vinegar |
1 large garlic clove crushed |
1/2 teaspoon dry mustard |
1/2 teaspoon salt |
1/2 teaspoon dried basil |
1/4 teaspoon pepper |
1/2 cup slivered almonds |
Directions:
1. Rinse and drain cauliflower then cut into small flowerets. 2. Wash and trim spinach then stack leaves and slice crosswise into 1/4 strips. 3. Place spinach in salad bowl along with cauliflower then cover and refrigerate until serving time. 4. In jar combine oil, vinegar, garlic, salt, mustard, basil and pepper. 5. Shake to blend well then just before serving pour dressing over vegetables. 6. Add almonds and mix gently but thoroughly. |
