CAULIFLOWER AND SCALLIONS This recipe came from an estate sale. I obtained it when I purchased the family collection from the McNabb Estate in Bedford, Texas in 1981. Ingredients:
1 small head cauliflower |
2 bunches scallions |
3 tablespoons canola oil |
1/2 teaspoon mustard seeds |
1/2 teaspoon turmeric |
2 jalapeƱo peppers |
1/3 cup hot water |
Directions:
1. Wash and drain cauliflower then separate into small florets. 2. Trim scallions and chop into 1/4 pieces. 3. Heat oil and when it is very hot add mustard seeds and stir constantly for 1 minute. 4. Add turmeric, jalapenos, salt and scallions stirring rapidly. 5. Cook for 1 minute then add cauliflower and stir to mix everything well. 6. Add water and simmer covered for 20 minutes then increase heat to evaporate any liquid. |
