Cauliflower and Almond Soup |

A crockpot recipe Ingredients:
1 leek, white part only, chopped |
2 cloves garlic, crushed |
4 ounces cauliflower, chopped |
2 potatoes, diced |
6 cups chicken stock |
1/2 cup blanched almond, chopped |
1/3 cup chives, chopped |
cream, to serve |
Directions:
1. Add first 5 ingredients to crockpot and cook on high for 3 hours. 2. Add almonds and use a hand held blender to puree to soup. 3. Add half of the chives. 4. To serve, laddle into bowls, drizzle with cream and sprinkle with remaining chives. |
