This probably would do 4 as a hearty side dish, but I could eat the whole thing by myself! I'm a sucker for garlic, what can I say?? Ingredients:
2 tsp oregano |
1 1/2 tsp sea salt |
1 tsp black pepper |
3-4 tbsp vegetable broth |
1 large head cauliflower, chopped |
20 garlic cloves, peeled and cracked |
Directions:
1. Preheat oven to 450F, line a deep roasting dish with parchment or foil. 2. Whisk together oregano, salt, pepper and vegetable broth. 3. Add cauliflower and garlic, toss to coat. 4. Spread in the dish in one layer. 5. Bake 30 minutes, stirring halfway through. |
