This is a very light yet amazingly tasty coleslaw. Instead of usual mayo this version uses Greek yogurt and the taste doesn't suffer in the least. Very refreshing. Ingredients:
1 onion, finely chopped |
1 head cabbage, finely chopped |
4 carrots, grated |
1 cup greek yogurt |
1 (8 ounce) can sliced pineapple, drained and chopped |
salt and pepper to taste |
paprika to taste |
garlic powder to taste |
Directions:
1. In a large bowl, mix the onion, cabbage, carrots, Greek yogurt, and pineapple. Season with salt and pepper, paprika, and garlic powder. Chill 30 minutes in the refrigerator before serving. |
