Another wonderful recipe I received from a friend in New Iberia Louisiana Ingredients:
1 tablespoon soy sauce |
3 tablespoons dry sherry |
1 garlic clove, minced |
2 tablespoons green onions, chopped |
1/4 teaspoon ground ginger |
4 catfish fillets, cut into 2-inch cubes |
1 red bell pepper, cut into strips |
2 ounces ham, thinly cut and julienned |
8 lemon slices |
Directions:
1. In medium bowl, combine soy sauce, sherry, garlic, scallions, ginger and catfish cubes. and allow to sit for 15 minutes. 2. Preheat oven to 450°F. 3. Cut four 12x12 inch pieces of parchment paper or aluminum foil. 4. Place catfish in paper or foil. 5. Top with red pepper strips, ham and 2 slices of lemon. 6. Spoon sauce over mixture. 7. Fold in edges of paper to form a triangle. 8. Crimp the edges to seal tightly. 9. Place on a baking sheet and bake in preheated oven for 10-12 minutes or until catfish flakes easily. 10. Remove from baking sheet and open paper. |
