Ingredients:
1 (15 ounce) can black beans, drained and rinsed
1/2 green pepper, diced
2 small roma tomatoes, diced
1 small celery rib, diced
1/2 small red onion, diced
1 cup frozen corn, thawed
1 fresh jalapeno, chopped (or to taste)
1/4 cup olive oil (to taste)
1/4 cup rice vinegar (to taste)
2 teaspoons parsley flakes, dried
1/2 teaspoon garlic salt
1/4 teaspoon black pepper
1 dash cumin
1 dash cayenne pepper
1 avocado, chopped
fresh cilantro, chopped
Directions:
1. Combine ingredients in a bowl. Garnish with chopped avocado and cilantro. Chill.
