This is very very rich and very very creamy. An elegant dessert to serve for company. Ingredients:
1 quart milk |
1-3/4 cups sugar |
8 egg yolks |
1 cinnamon stick |
1 small piece of lemon peel |
2 level tablespoons cornstarch |
Directions:
1. Pour some milk into a cup. Pour remaining milk into a saucepan then add the cinnamon stick and lemon peel then bring it to a boil over low heat. Cook 3 minutes over very low heat. Strain and discard cinnamon and lemon peel. In the meantime stir cornstarch into the cup of milk at room temperature and stir until it is very well dissolved. In a bowl mix sugar and egg yolks. Beat mixture until smooth and spongy. Slowly add milk while you continue stirring. Add milk and cornstarch mixture and stir until it is a smooth mixture. 2. Pour mixture into a saucepan over low heat stirring all the time. Just when it is about boiling remove from heat with one hand while you continue stirring with the other hand for about two minutes. Pour into a cassoleta, custard cups or small ramekins. Allow it to cool at room temperature or refrigerate until set. Just before serving sprinkle some sugar and burn it with a torch. If you don't have a torch burn sugar under a hot broiler. |
