4 pounds ground fresh pork |
1 pound ground beef |
3 tablespoons plus 1 teaspoon salt |
1 tablespoon plus 1 teaspoon ground coriander |
1 tablespoon pepper |
1 clove garlic, crushed |
dash of ground allspice |
dash of ground cloves |
pork sausage casings (10 to 11 feet) |

1. Combine first 8 ingredients in a large bowl; mix well. 2. Rinse pork casings thoroughly with warm water; drain. Tie one end of each casing securely with cotton string.
