Cast-iron Skillet Corn Bread |

Traditional Southern cornbread. My grandma always makes this with black eyed peas on New Year's day! Delicious with pretty much any soup. Ingredients:
1 c. flour |
4 tbs. baking powder |
1 tsp. salt |
1c. cornmeal |
2 eggs, beaten |
1/4 c. bacon drippings |
1 c milk |
3 tbs. sugar |
Directions:
1. Preheat oven to 425 Degrees. 2. Grease the bottom and side of a cast-iron skillet, then put it in the oven while you make the batter. 3. Sift flour, baking powder and salt into a bowl. 4. Add the cornmeal and blend with a spoon. 5. Add the eggs, drippings, milk and sugar. 6. Lightly stir until blended. 7. Remove skillet from the oven and pour in the batter. 8. Bake for 20 minutes or until a toothpick poked into the center comes out clean. 9. Variation: For jalapeno cheese cornbread, Add 3/4 C. grated cheddar cheese and 1 small can of diced jalapenos (drained) |
