Quick and Easy Scallop Appetizer....perfect recipe for camping!! It can be made in your cast iron skillet directly over your campfire! Ingredients:
8-10 colassal size sea scallops |
kosher salt & fresh cracked black pepper |
8-10 small strips of bacon ( long enough to wrap around your scallop) |
16-20 thin strips of fresh jalepeno |
4 garlic cloves minced |
4 t butter |
Directions:
1. Salt and Pepper your Scallops 2. Assemble the scallops as followed: 3. place two jalepeno strips on opposite sides of the scallop and then wrap with a strip of bacon. 4. Secure the bacon and jalepeno to the scallop with a toothpick. 5. Heat your grill or oven up to 400 6. Place your cast iron skillet on the grill and saute the garlic in the 4 T of butter. 7. Add the scallops to the skillet and cook for Approx 7-8 min, turning halfway. |
