Good for a crowd. Must make the night before. Ingredients:
8 eggs |
5 oz whole wheat bread |
8 oz neufchatel cheese |
1/2 cup maple syrup |
1 tsp cinnamon |
Directions:
1. Do this the night before: Soften cream cheese. Beat with the eggs, syrup, and cinnamon to a batter consistency. 2. Cut bread into cubes. 3. Spray a 9x13-inch pan with cooking spray. 4. Arrange bread cubes in pan. Pour batter over, and stir to coat all bread. Refrigerate overnight. 5. In the morning, preheat oven to 350 degrees. Bake for 25-30 minutes until eggs are set and knife inserted comes out clean. |
