Vegan ice cream made with raw cashews and honey substituted for the agave called for in the original recipe from Elana's Pantry, recipe found at: /vegan-vanilla-ice-cream/ This ice cream is a nice substitute if you can't have dairy products. Slightly grainy taste which may be eliminated by soaking the cashews overnight. Ingredients:
1 cup raw cashews |
2 cups water |
1/4 cup honey |
1 tablespoon vanilla |
1 pinch sea salt |
Directions:
1. Add cashews to blender, along with honey, vanilla and sea salt. 2. Add one-half cup water. 3. Blend until smooth. 4. Add remaining water, blend until frothy. 5. Place in ice cream maker and process until it looks like soft serve. |
