This is an easy and very delicious recipe. They were all gone in the same day I baked. Worth trying! Ingredients:
1 + 2/3 cups flour |
1 teaspoon salt (no need to use if you have salted butter) |
2 + 1/2 cups cashew |
2 1/2 tablespoons olive oil |
6 tablespoons butter, at room temperature |
3/4 cups brown sugar |
1/2 cups white sugar |
1 egg |
1 pkg vanilla |
Directions:
1. Preheat oven to 350F 2. In a food processor, coarsely chop 1 1/2 cups of cashews, and finely chop the remaining. Add oil and mix until creamy texture, app. 2 mins. 3. Put the butter, sugar (brown+white) and the mixture in the food processor together in another bowl with a hand mixer for about 2 mins. 4. Add egg and vanilla and continue mixing. 5. Lower the speed and add flour+salt slowly. 6. Add and stir coarse cashews with a spoon. 7. Take a piece from the mixture almost like a walnut, make a ball. 8. Put them in an oven pan without pushing them down. After baking 6 mins, open the oven and push each down with a spatula. Bake for 6-7 mins more. 9. Optional: Put caramel sauce on them after cool completely. |
