Ingredients:
1 pound(s) chicken breasts |
1 onion chopped |
2 stalk(s) celery |
1 package(s) pea pods |
1 package(s) carrots - small baby |
1 package(s) mushrooms |
1 package(s) water chestnuts |
1 cup(s) cashews |
1 tablespoon(s) corn starch |
2 tablespoon(s) soy sauce |
2 tablespoon(s) vegetable oil |
1 cup(s) chicken broth |
Directions:
1. Slice chicken 1/8 thick, 2 long 2. Marinate chicken in 1 Tbs corn starch and 2 Tbs soy sauce 3. Slice celery, carrots and onion in bite size pieces 4. Sauce: Blend 2 Tbs corn starch and 1 cup chicken broth 5. Heat stir fry pan on medium. Add 1 Tbs oil and cashews. Stir 30-60 seconds 6. Remove from pan 7. Heat 1 Tbs oil to high. Add chicken. Stir to golden brown 1-2 minutes 8. Remove from pan 9. Heat 2 Tbs oil to high. Add vegetables. Put lid on pan. Shake. 10. Uncover. Cook 2-4 minutes longer 11. Return chicken and sauce to vegetables until it boils. Add cashews |
