This is a candy i make for Christmas. Very, very tasty. I get requests for this for gifts. Ingredients:
1 cup sugar |
1 cup butter (no substitutes) |
1 tablespoon light corn syrup |
1 1/2 cups salted cashew pieces |
Directions:
1. In 2 quart sauce pan combine sugar, butter and corn syrup. 2. Cook over low heat, stirring occasionally until candy thermometer reaches 290. 3. About 25-30 minutes. 4. Remove from heat, stir in cashews. 5. Spread 1/4 thickness on a waxed paper lined jellyroll pan. 6. Cool completely, break into pieces. 7. Store in air tight container. |
