Found this on the side of the couscous box, but made a few changes. This recipe makes enough to bring to a potluck or picnic. Ingredients:
3 cups cooked couscous |
2 cups tomatoes, diced |
2 cups cucumbers, diced |
1 cup green onion, chopped |
2 cups cooked garbanzo beans |
1/2 teaspoon black pepper |
1 cup kalamata olive, halved |
1/2 cup olive oil |
3/4 cup lemon juice |
4 garlic cloves, mnced |
1 teaspoon salt |
chopped fresh mint, to taste |
Directions:
1. Combine all ingredients and refrigerate until serving. |
