This is a delicious fill them up dish I make ahead for my husband to pop in the oven when he gets home first. I like Ricotta cheese in this dish, but drained cottage cheese may be substituted. Ingredients:
8 oz wide egg noodles |
2 lbs ground beef |
3 t butter |
2 c tomato sauce |
2 t flour |
2 c ricotta or cottage cheese |
1 c sour cream |
1 t salt |
1/2 t pepper |
1/4 c chopped black olives |
1/3 c grated onion |
1/2 c chopped green pepper |
1/3 c grated parmesan cheese (optional) |
Directions:
1. Cook the noodles according to package directions in salted boiling water. 2. Drain. 3. Brown beef in 2 tablespoons of butter. 4. Add the flour to the beef and cook for one minute. 5. Add the tomato sauce to the beef mixture and cook for 10 minutes on medium heat. 6. Mix Ricotta with sour cream. salt, pepper and the olives. 7. Saut'e the onion and green pepper in the remaining tablespoon of butter. 8. Add the onion pepper mixture to the cream cheese mixture. 9. Place half of the noodles in a greased 3 quart casserole dish. 10. Spread with cheese mixture over the noodles. 11. Place the rest of the noodles over the cheese mixture. 12. Cover with all of the beef mixture. Sprinkle with Parmesan cheese if desired. Bake at 350*F for 30-40 minutes, or until heated through. |
