Carrott Pineapple And Jello Salad

THIS JELLO SALAD WILL GO WITH JUST ABOUT ANY MEAL. WE LIKE IT IN THE SUMMER TIME WHEN IT IS HOT AND WE NEED SOMETHING COOL TO EAT.
Ingredients:
2-large pkgs of orange jello - i have used lemon jello too, and also the tangerine jello.- i use sugar free jello gelatin.
large can of pineapple tid bits-drained well
1 1/2 c. of finely grated carrotts
1/2 to 3/4 c. of mayonaise optional- i use the fat free mayonaise
* you can also use a 1 1/2 cups of cottage and 1/4 cup of finely chopped nuts like walnuts in this recipie.
Directions:
1. PREPARE JELLO BY THE DIRECTIONS ON THE BOX THEN PLACE INTO A SQUARE OR OBLONG BAKING DISH (GLASS PREFERED).
2. YOU CAN ADD THE MAYONAISE WHEN THE JELLO IS SOFT SET. JUST MIX IN WITH A WIRE WISP. YOU CAN ALSO LEAVE THE MAYONAISE OUT OF THE SALAD. IT TASTES GREAT EITHER WAY.
3. THEN ADD THE WELL DRAINED PINEAPPLE AND THE GRATED CARROTTS.
4. I USE THE PINEAPPLE JUICE FOR SOME OF THE LIQUID THAT IS USED TO MAKE THE JELLO . YOU CAN USE A JELLO MOLD AND LEAVE 1 PKG. OF THE JELLO PLAIN AND PREPARE IT AND POUR INTO JELLO MOLD AND WHEN JELLO IS SET UP ADD THE OTHER PACKAGE OF JELLO WITH THE MAYONAISE AND CARROTTS AND PINAPPLE ON TOP OF THE PLAIN JELLO IN THE MOLD. THIS MAKES A VERY NICE MOLDED SALAD FOR A PARTY. WHEN READY TO SERVE JUST SET FOR A FEW SECONDS IN A BOWL OF WARM WATER TO LOOSEN THE JELLO PLACE ON PLATE AND SERVE.
