These are very good. I obtained this friend from a coworker who brought these to an office potluck. A huge hit and one that is easy to make for a small group or large group. Enjoy Ingredients:
1 teaspoon coarse salt plus more for water |
2 pounds carrots peeled and cut crosswise on the diagonal into 1” pieces |
4 tablespoons unsalted butter |
4 large shallots thinly sliced into rings |
1/4 cup honey |
2 tablespoons dijon mustard |
Directions:
1. Bring a medium saucepan of salted water to a boil. 2. Add carrots and cook until tender about 15 minutes then drain well and set aside. 3. Melt butter in a medium skillet over medium high heat. 4. Add shallots and cook stirring occasionally until beginning to brown about two minutes. 5. Add honey, mustard and salt then stir to combine. 6. Add carrots and heat through then serve immediately. |
