Carrots With Olives And Twenty Cloves Of Garlic |

This is an incredible dish. Bursting with flavors and loaded with vitamins. Ingredients:
1 tablespoon olive oil or canola oil |
1 large onion peeled and coarsely chopped |
20 whole small garlic cloves |
1 cup vegetable stock |
1 pound carrots cut into 1 chunks |
1/2 teaspoon dried rosemary leaves |
1/4 cup coarsely chopped olives |
1/4 teaspoon sea salt |
Directions:
1. Heat oil in pressure cooker and sauté onions and garlic about 2 minutes. 2. Add stock and bring to a boil then add carrots, rosemary, olives and salt. 3. Lock lid in place and over high heat bring to high pressure. 4. Lower pressure with a quick release method. 5. Remove lid tilting it away from you to allow any excess steam to escape. 6. Serve mixture in small bowls or lift out solid ingredients with slotted spoon and serve on a plate. |
