This dish complements Mock Rice Pilaf Raw Vegan lunch dish Ingredients:
2 carrots, peeled |
2 tablespoons chopped fresh parsley |
2 tablespoons fresh orange juice |
1 1/2 teaspoons lemon juice |
1 1/2 teaspoons extra-virgin olive oil |
1/8 teaspoon salt |
1/8 teaspoon cayenne |
1/8 teaspoon ground cinnamon |
1/8 teaspoon ground cumin |
1/8 teaspoon black pepper |
Directions:
1. Thinly slice the carrots using a mandoline or a sharp knife. Place in a mixing bowl along with the remaining ingredients. Toss well. Stored in a sealed container in the refrigerator, will keep for three days. |
