Carrots With Goronzola Cheese

Ingredients:
2 1/2 lbs carrots
1/4 cup butter
4 ounces gorgonzola, crumbled
1/2 teaspoon salt
pepper
Directions:
1. Using a food processor and the slicing blade, slice carrots.
2. Using a steamer, put water in bottom of steamer and bring water to a boil.
3. Add carrots to steamer rack, cover and cook until crisp-tender (***carrots can be prepared 2 days ahead, covered and refrigerated***).
4. In a skillet, melt butter over low heat.
5. Add cheese and cook until cheese melts, stirring constantly.
6. Stir in carrots, salt and pepper, cooking until heated through, stirring frequently.
