A great accompaniment for my chicken tajine. Ingredients:
bunch young carrots |
1 c orange juice (any) |
1 tsp cumin (powdered) |
1 tsp cumin (grains) |
1/4 olive oil |
1 tsp demererra sugar (or sugar in the raw) |
salt, pepper |
flat leave parsley |
Directions:
1. Peel the carrots and cut them into sticks. 2. Cover with orange juice, add sugar and the 2 types of cumin. 3. Simmer until tender - let cool, salt and pepper to taste, add olive oil and garnish with parlsey. |
