Carrots Vichy the Irish Way |

Ingredients:
4 tablespoon(s) butter |
2 pound(s) baby carrots |
2 cup(s) water |
2 pinch(s) salt |
1/2 teaspoon(s) sugar |
1/4 teaspoon(s) majoram |
2 tablespoon(s) parsley, chopped fine |
1/4 cup(s) cream or half-and-half |
Directions:
1. In a medium saucepan, bring water to a boil. Add salt and carrots,cook til tender when pierced with a fork. Drain and set aside. Melt 4 tablespoons butter in the pan, add the carrots, stir just enough to coat the carrots , then add sugar and majoram, again stirring just to coat. Add the cream, sprinkle with parsley. Serve |
