Loved these as a kid and still do. Ingredients:
8-10 carrots, peeled and cut into coins |
salt and pepper to taste |
4 tbls. butter |
Directions:
1. In saucepan, add water and vegetable steamer 2. Add carrots to steamer 3. Bring water to boil 4. Cook until carrots are fork tender 5. Melt butter 6. In mixing bowl, add carrots, butter, salt and pepper 7. Mash with potato masher until slightly mashed; leaving some chunks of carrots |
