A simple side dish from The Complete Quick & Hearty Diabetic Cookbook by The American Diabetes Association. Ingredients:
1 lb carrot, peeled, diagonally sliced |
1/4 cup marsala wine |
1/4 cup water |
1 tablespoon olive oil |
fresh ground black pepper, to taste |
1 tablespoon fresh parsley, chopped |
Directions:
1. In a large saucepan, combine carrots, wine, water, oil, and pepper. 2. Bring to a boil, cover, reduce the heat, and simmer for 10 minutes, basting occasionally. 3. Transfer to a serving dish, spoon any juices on top, and sprinkle with parsley. 4. Serving size: 1/2 cup. 5. Exchanges Per Serving: 1 Vegetable, 1/2 Fat. 6.
