Carrots In Cumin Dressing

Ingredients:
2 tablespoon(s) red wine vinegar
1 tablespoon(s) fresh lemon juice
1 teaspoon(s) ground cumin
1 teaspoon(s) hungarian sweet paprika
1/4 teaspoon(s) ground allspice
6 tablespoon(s) olive oil
2 1/2 pound(s) large carrots cut on diagonal into 1/2-inch thick ovals
1/4 cup(s) fresh cilantro chopped
Directions:
1. Combine first 5 ingredients in small bowl; whisk in oil. Season with salt and pepper. (Can be made 1 day ahead. Cover and store at room temperature.)
2. Cook carrots in pot of boiling water until crisp tender, 4 minutes at the least 6 minutes at the latest. Darin. Place in bowl. Mix in dressing. Let stand 30 minutes, tossing often. Season with salt and pepper. Mix in cilantro.
