CARROTS AND PRUNES IN ORANGE JUICE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Marcus Estate in Greenville, Texas in 1994. Ingredients:
8 large carrots |
1 cup prunes |
2 cups orange juice |
1/3 cup granulated sugar |
4 tablespoons butter melted |
1 teaspoon grated lemon zest |
1/2 teaspoon grated fresh ginger root |
Directions:
1. Place carrots and prunes in saucepan then cover with orange juice. 2. Bring mixture to a boil and let boil for 10 minutes then stir in sugar and butter. 3. Simmer gently for 1 hour or until the liquid is almost absorbed. 4. Sprinkle with lemon zest and ginger and let simmer another 5 minutes. |
