CARROT ZUCCHINI OMELET This recipe came from an estate sale. I obtained it when I purchased the family collection from the Willingham Estate in Fort Worth, Texas in 1984. Ingredients:
2 cloves garlic crushed |
3 tablespoons butter |
2 medium zucchini grated |
2 large carrots grated |
1 egg beaten |
salt pepper and cayenne to taste |
1/3 cup grated cheddar cheese |
Directions:
1. In a skillet sauté garlic in butter then add zucchini and carrots and stir until tender. 2. Stir in egg then add remaining ingredients and stir over low heat 2 minutes. 3. Sprinkle with additional cheese just before serving. |
