3 large carrots, shredded (about 1 1/2 cups) |
1 tablespoon extra-virgin olive oil |
2 teaspoons fresh lemon juice, or to taste |
1/4 teaspoon salt |
1 1/2 tablespoons chopped walnuts, toasted lightly |
Directions:
1. In a bowl toss carrots with oil. Add remaining ingredients and toss well. |
